  • 1 cup cooked shrimp, chopped
  • 1/4 cup cucumber, diced
  • 1/4 cup red onion, diced
  • 1/4 cup cherry tomatoes, halved
  • 2 tbsp fresh lime juice

  • Salt and pepper to taste

Instructions

  1. Cut and Scoop: Begin by cutting the avocados in half and carefully removing the pit. Gently scoop out some of the flesh to create a larger cavity for the scrumptious filling.
  2. Mix the Filling: In a bowl, combine the chopped shrimp, diced cucumber, red onion, halved cherry tomatoes, lime juice, and olive oil. Add a pinch of salt and pepper, and give it a good mix. You want the flavors to meld beautifully together!
