Delicious and comforting stuffed zucchini boats filled with ground beef, marinara sauce, and melted mozzarella cheese.

Ingredients

  • 4 medium zucchinis
  • 1 pound ground beef
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the zucchinis in half lengthwise and scoop out the center to create boats.
  3. Heat olive oil in a skillet over medium heat. Add onions and garlic and sauté until fragrant.
  4. Add the ground beef and cook until browned. Stir in marinara sauce, Italian seasoning, salt, and pepper, and let simmer.
  5. Place the zucchini boats on a baking sheet and fill with the beef mixture.
  6. Top each boat with shredded mozzarella cheese.
  7. Bake in the preheated oven for about 25-30 minutes until tender and bubbly.
  8. Remove from the oven and serve hot.
