A delightful dish made from fresh zucchinis filled with a savory mixture of ground meat, rice, and cheese, perfect for summer cooking.

Ingredients

  • 4 medium zucchinis
  • 1 cup cooked rice
  • 1 cup ground beef or turkey
  • 1 cup diced tomatoes
  • 1/2 cup chopped onion
  • 1 cup shredded cheese (mozzarella or cheddar)
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the zucchinis in half lengthwise and scoop out the centers.
  3. Heat olive oil in a skillet and sauté the onions until translucent.
  4. Add ground meat and cook until browned.
  5. Stir in rice, diced tomatoes, garlic powder, salt, and pepper.
  6. Fill the zucchini boats with the meat mixture.
  7. Top with shredded cheese.
  8. Bake for 20-25 minutes until tender and cheese is golden.
