Deliciously soft and chewy sugar-free peanut butter cookies, perfect for a healthy treat.

  • 1 cup natural peanut butter
  • 1 large egg
  • 1/2 cup granulated sugar substitute (erythritol or monk fruit)
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone baking mat.
  2. Combine the natural peanut butter, egg, sugar substitute, vanilla extract, and salt in a medium mixing bowl. Stir vigorously until smooth.
  3. Portion out the dough into 12 equal balls and place them on the prepared baking sheet, spaced about 2 inches apart.
  4. Flatten each ball with a fork in a crisscross pattern.
  5. Bake the cookies for 10-12 minutes or until lightly golden brown.
  6. Cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
