A delightful blend of tender chicken, creamy sauce, and sun-dried tomatoes, perfect for weeknight meals or cozy gatherings.

Ingredients

  • 8 oz pasta (penne or spaghetti)
  • 2 chicken breasts, sliced
  • 1 cup sun-dried tomatoes in oil, drained and chopped
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Instructions

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. Sauté the chicken in olive oil, seasoning with salt and pepper. Cook until golden, about 5-7 minutes.
  3. Add minced garlic and sun-dried tomatoes to the skillet. Cook for about 2 minutes.
  4. Create the creamy sauce by pouring in the heavy cream and stirring in the Parmesan until melted.
  5. Combine the cooked pasta with the sauce, tossing to coat.
  6. Plate and garnish with fresh basil leaves.

Notes

Leftovers can last for up to 3 days in an airtight container. Add cream when reheating to restore the sauce’s consistency.
