A simple yet flavorful Italian dish featuring sun-dried tomatoes and garlic, perfect for any occasion.

Ingredients

  • 8 oz pasta (spaghetti or penne)
  • 1 cup sun-dried tomatoes (packed in oil, chopped)
  • 3 cloves garlic (minced)
  • 1/4 cup olive oil
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil leaves (for garnish)

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add garlic and red pepper flakes, and sauté for about 1 minute until fragrant.
  3. Stir in the chopped sun-dried tomatoes and cook for another 2-3 minutes until warmed through.
  4. Add the cooked pasta to the skillet and toss well to combine with the tomato mixture.
  5. Mix in grated Parmesan cheese and season with salt and pepper to taste.
  6. Garnish with fresh basil leaves before serving.

Notes

Serve with a crisp arugula salad and a glass of white wine.
