A vibrant coleslaw featuring the crunch of cabbage, sweetness of apples and cranberries, and a tangy dressing.

  • 1 16 ounce bag Coleslaw mix (or 1 small green cabbage sliced thin)
  • 2 medium Apples (thinly sliced, peeled optional)
  • 1/2 cup Dried sweet cranberries (or Craisins)
  • 1/3 cup Mayonnaise
  • 3 tablespoons Lemon juice (juice of 1 large lemon)
  • 1 tablespoon Sugar
  • 1/2 teaspoon Kosher salt

Instructions

  1. Prepare the Cabbage: If you’re using a bag of coleslaw mix, you’re already on your way! For fresh cabbage, take that small green cabbage and slice it thinly.
  2. Slice the Apples: Grab those two apples and thinly slice them.
  3. Combine the Dried Cranberries: Toss the dried sweet cranberries (or Craisins) into the mix.
  4. Whisk Together the Dressing: In a separate bowl, whisk together the mayonnaise, lemon juice, sugar, and kosher salt.
  5. Mix and Toss: Pour the dressing over the coleslaw mixture and apples. Use tongs to gently toss everything together.
  6. Chill and Serve: Let your coleslaw chill in the refrigerator for at least 15 minutes before serving.

Notes

Store in an airtight container for up to 3 days. Best enjoyed fresh.
