Ingredients
Scale
1 16 ounce bag Coleslaw mix (or 1 small green cabbage sliced thin)
2 medium Apples (thinly sliced, peeled optional)
1/2 cup Dried sweet cranberries (or Craisins)
1/3 cup Mayonnaise
3 tablespoons Lemon juice (juice of 1 large lemon)
1 tablespoon Sugar
1/2 teaspoon Kosher salt
Instructions
Prepare the Cabbage: If you’re using a bag of coleslaw mix, you’re already on your way! For fresh cabbage, take that small green cabbage and slice it thinly.
Slice the Apples: Grab those two apples and thinly slice them.
Combine the Dried Cranberries: Toss the dried sweet cranberries (or Craisins) into the mix.
Whisk Together the Dressing: In a separate bowl, whisk together the mayonnaise, lemon juice, sugar, and kosher salt.
Mix and Toss: Pour the dressing over the coleslaw mixture and apples. Use tongs to gently toss everything together.
Chill and Serve: Let your coleslaw chill in the refrigerator for at least 15 minutes before serving.
Notes
Store in an airtight container for up to 3 days. Best enjoyed fresh.
