Delicious sweet potatoes filled with eggs and crispy bacon, perfect for a nourishing breakfast.

Ingredients

  • 2 medium sweet potatoes
  • 4 large eggs
  • 4 slices of bacon
  • Salt and pepper to taste
  • Chopped green onions for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C) to set the stage for perfectly baked sweet potatoes.
  2. Bake the sweet potatoes by piercing them with a fork and placing them in the oven for 45-60 minutes, or until tender.
  3. Cook the bacon in a skillet over medium heat until crisp, then chop into pieces.
  4. Prepare the sweet potato boats by slicing the baked sweet potatoes in half and scooping out some flesh.
  5. Add an egg into each sweet potato half and season with salt and pepper.
  6. Top with crispy bacon bits.
  7. Bake again for an additional 15-20 minutes until the eggs are set to your liking.
  8. Garnish with chopped green onions if desired, and serve warm.
