Ingredients

  • 1 bell pepper, diced
  • 1 small onion, diced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 4 large eggs
  • Fresh herbs for garnish (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the diced sweet potatoes and cook until they begin to soften, about 10 minutes.
  3. Add the bell pepper and onion, cooking for an additional 5-7 minutes until the vegetables are tender.
  4. Season with salt and pepper.
  5. Create small wells in the hash and crack an egg into each well.
  6. Cover the skillet and cook until the eggs are set to your liking.
