Delicious baked sweet potatoes filled with crispy bacon, fluffy eggs, and melted cheese, creating a delightful and comforting breakfast.

Ingredients

  • 2 medium sweet potatoes
  • 4 slices of bacon
  • 4 eggs
  • 1 cup cheese (your choice: cheddar, mozzarella, or a cheese blend)
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and pierce sweet potatoes with a fork. Bake for 45-60 minutes until tender.
  3. Cook bacon in a skillet until crispy.
  4. Remove bacon and scramble the eggs in the same skillet. Season with salt and pepper.
  5. Cut open the sweet potatoes once cooked and let them cool slightly.
  6. Fill each sweet potato with scrambled eggs, crumbled bacon, and cheese.
  7. Return to the oven for an additional 5-10 minutes until cheese melts.
  8. Serve hot with a sprinkle of fresh herbs if desired.

Notes

For a healthier option, swap the bacon for turkey bacon or omit it for a vegetarian dish. Customize with your favorite veggies or cheese.
