A delightful fusion of pasta and tacos, this Taco Pasta is the ultimate comfort food that brings family together.

  • 8 oz pasta (your choice: penne, fusilli, or elbow)
  • 1 lb ground beef or turkey
  • 1 packet taco seasoning
  • 1 can diced tomatoes (14 oz)
  • 1 cup corn (fresh or frozen)
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1/2 cup chopped onions
  • 1/4 cup chopped cilantro
  • Salt and pepper to taste

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Cook pasta according to package instructions until al dente. Drain and set aside.
  2. Brown the Meat: In a large skillet over medium heat, add the ground beef or turkey. Cook until browned, breaking it apart with a spatula, about 5–7 minutes.
  3. Sauté the Onions: Add the chopped onions to the skillet and cook until they are soft and translucent, about 3–4 minutes.
  4. Mix in the Seasoning: Stir in the taco seasoning, diced tomatoes (with juices), and corn. Let it simmer for about 5 minutes so the flavors meld together.
  5. Combine Pasta and Meat: Carefully add the cooked pasta to the meat mixture, stirring well until everything is coated with that tasty seasoning.
  6. Melt the Cheese: Top the pasta and meat mixture with shredded cheese. Cover briefly until the cheese melts, about 2–3 minutes.
  7. Garnish with Fresh Cilantro: Sprinkle chopped cilantro on top to add color and freshness.
  8. Serve Warm: Scoop generous portions onto plates and enjoy your warm and comforting Taco Pasta!

Notes

For added veggies, consider bell peppers, zucchini, or black beans. Use rotisserie chicken for faster prep.
