  • 6 large eggs
  • 1 cup milk
  • 1 cup shredded cheese (cheddar or your choice)
  • 1 cup cooked breakfast sausage or bacon, crumbled
  • Salt and pepper to taste
  • Optional: diced vegetables (such as bell peppers, onions, or spinach)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Whisk together the eggs and milk, seasoning generously with salt and pepper.
  3. Spread an even layer of tater tots in a greased baking dish.
  4. Pour the whisked egg mixture evenly over the tater tots.
  5. Sprinkle the cooked sausage or bacon on top, followed by the shredded cheese and optional vegetables.
  6. Bake for 30-35 minutes, or until the eggs are fully set and the top is golden brown.
