A comforting and flavorful Teriyaki Chicken Casserole that’s easy to prepare and perfect for family gatherings.

Ingredients

  • 2 cups cooked rice (white or brown)
  • 1 lb boneless, skinless chicken breasts (diced)
  • 2 cups mixed vegetables (such as broccoli, carrots, and bell peppers)
  • 1 cup teriyaki sauce
  • 1 cup shredded mozzarella cheese (optional)
  • 1 tablespoon vegetable oil
  • 2 cloves garlic (minced)
  • 1 teaspoon ground ginger
  • 1 tablespoon sesame seeds (optional, for garnish)
  • 3 green onions, chopped (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Heat the vegetable oil in a large skillet over medium heat.
  3. Add the minced garlic and ground ginger, cooking for about 1 minute until fragrant.
  4. Cook the diced chicken for about 5-7 minutes until no longer pink in the center.
  5. Stir in the mixed vegetables and cook for another 3-4 minutes until tender.
  6. Combine the cooked rice, chicken and vegetable mixture, and teriyaki sauce in a large bowl.
  7. Transfer the mixture into a 9×13 inch baking dish, spreading it out evenly.
  8. Sprinkle the mozzarella cheese on top.
  9. Bake for 30 minutes until the cheese is melted and bubbly.
  10. Garnish with sesame seeds and chopped green onions before serving.

Notes

This casserole can be stored in the fridge for up to 5 days and freezes well for up to 3 months.
