A comforting and delicious pressure cooker version of the classic Texas Roadhouse Smothered Chicken, topped with sautéed onions, mushrooms, bacon, and melted cheese.

  • 4 boneless skinless chicken breasts
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • 2 tablespoons olive oil
  • 1 small onion sliced
  • 1 cup mushrooms sliced
  • 1 cup Monterey Jack cheese shredded
  • ½ cup cheddar cheese shredded
  • 4 slices cooked bacon crumbled

Instructions

  1. Season the chicken breasts generously with salt, black pepper, and garlic powder.
  2. Sear the chicken in the pressure cooker with olive oil for about 4-5 minutes on each side.
  3. Remove the chicken and sauté sliced onions and mushrooms together for 3-4 minutes.
  4. Combine the seared chicken back into the pot with the sautéed veggies.
  5. Close the lid and set the pressure cooker to high pressure for 10 minutes.
  6. Quickly release the steam, then sprinkle the shredded cheeses on top.
  7. Garnish with crumbled bacon before serving.

Notes

For extra flavor, ensure even-sized chicken breasts and consider searing for added depth. Use freshly grated cheese for the best meltiness.
