A comforting and hearty Texas Roadhouse chili filled with ground beef, fragrant spices, and kidney beans.

Ingredients

  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 can (28 oz) crushed tomatoes
  • 2 cans (15 oz) kidney beans, drained and rinsed
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. Browning the beef: In a large pot, brown the ground beef over medium heat. Breaking it up as it cooks, let it sizzle until it’s nicely browned.
  2. Add the chopped onion, minced garlic, and bell pepper to the pot. Stir occasionally, cooking until the veggies are softened and fragrant.
  3. Stir in the crushed tomatoes, kidney beans, chili powder, cumin, paprika, salt, and pepper. Give it a good mix.
  4. Bring the mixture to a boil, then reduce the heat. Let it simmer gently for at least 30 minutes.
  5. Serve the chili hot, ideally with some cornbread or tortilla chips on the side.

Notes

For a spicier version, add diced jalapeños or a pinch of cayenne pepper during cooking.
