Delicious cookies that encapsulate the rich flavors of traditional tiramisu, combining coffee, mascarpone, and cocoa in a delightful cookie form.

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup mascarpone cheese
  • 1 cup brewed espresso or strong coffee, cooled
  • 1/2 cup cocoa powder
  • Chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter, granulated sugar, and brown sugar until smooth.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. Whisk together the flour, baking soda, and salt in another bowl.
  5. Add the dry mixture to the butter mixture and mix until just combined.
  6. Fold in the mascarpone cheese, cooled coffee, and cocoa powder until uniform.
  7. Drop spoonfuls of dough onto a parchment-lined baking sheet.
  8. Bake for 10-12 minutes, until edges are golden but centers are slightly soft.
  9. Allow to cool on the baking sheet before transferring to a wire rack.
