A fragrant and flavorful Thai soup that combines the essence of spicy, sour, and aromatic ingredients for a heartwarming dish.

Ingredients

  • 4 cups chicken or vegetable broth
  • 1 stalk lemongrass, cut into 2-inch pieces and smashed
  • 34 kaffir lime leaves, torn
  • 34 slices galangal or ginger
  • 200g shrimp, peeled and deveined
  • 200g mushrooms, sliced
  • 12 Thai bird chilies, smashed
  • 2 tablespoons fish sauce
  • 1 tablespoon lime juice
  • Cilantro for garnishing

Instructions

  1. Bring the broth to a boil in a pot.
  2. Add the lemongrass, torn kaffir lime leaves, and slices of galangal or ginger to the broth.
  3. Cook until the shrimp turns a lovely pink.
  4. Stir in the smashed Thai bird chilies, fish sauce, and lime juice.
  5. Remove the pot from heat, then ladle the soup into bowls and garnish with cilantro.

Notes

For a vegetarian version, swap shrimp for tofu or vegetables, and use vegetable broth.
