A warm and comforting tomato bisque that’s perfect for chilly evenings and gatherings.

Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 1 cup vegetable broth
  • 1 teaspoon dried basil
  • 1 teaspoon sugar
  • Salt and pepper to taste
  • 1 cup heavy cream
  • Fresh basil for garnish

Instructions

  1. Heat 2 tablespoons of olive oil over medium heat in a pot.
  2. Add 1 chopped onion and 2 cloves of minced garlic. Sauté until softened, about 5 minutes.
  3. Stir in 1 can (28 ounces) of crushed tomatoes, 1 cup of vegetable broth, 1 teaspoon of dried basil, 1 teaspoon of sugar, and season with salt and pepper to taste.
  4. Bring the mixture to a boil, then reduce to a simmer and cook for about 20 minutes.
  5. Using an immersion blender, carefully puree the soup until smooth.
  6. Stir in 1 cup of heavy cream, heating gently without boiling.
  7. Serve hot, garnished with fresh basil.

Notes

For extra flavor, consider roasting the tomatoes or adding smoked paprika. For a vegan version, substitute the cream with coconut milk.
