  • 1 top round roast (about 34 lbs)
  • 2 tablespoons olive oil
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 cup beef broth (optional)

Instructions

  1. Preheat the oven to 450°F (230°C).
  2. Pat the top round roast dry with paper towels.
  3. In a small bowl, mix together olive oil, salt, pepper, garlic powder, onion powder, thyme, and rosemary.
  4. Rub the seasoning mixture all over the roast.
  5. Place the roast in a roasting pan.
  6. Roast for 20 minutes at 450°F, then reduce the temperature to 325°F (165°C) and continue roasting for 1.5 to 2 hours.
  7. Pour beef broth into the pan halfway through cooking if using.
  8. Remove from the oven, cover loosely with foil, and let it rest for 15-20 minutes before slicing.
  9. Serve the roast with your favorite sides.

Notes

Let your meat come to room temperature before roasting for even cooking. Use a meat thermometer to check doneness.
