Traditional Swedish Pancakes

Deliciously thin and versatile pancakes that evoke the spirit of Swedish hospitality.

Ingredients

  • 1 cup all-purpose flour
  • 1 cup milk
  • 2 large eggs
  • 2 tablespoons sugar
  • 1/4 teaspoon salt
  • 2 tablespoons butter (melted)
  • Powdered sugar for serving
  • Lingonberry sauce or other toppings

Instructions

  1. Combine the flour, milk, eggs, sugar, salt, and melted butter in a blender. Blend until smooth.
  2. Prepare a skillet over medium heat and lightly grease with cooking spray or butter.
  3. Pour about 1/4 cup of batter into the skillet for each pancake, allowing the batter to spread slightly.
  4. Cook until the edges are set and the bottom is browned, then flip and cook the other side for 1-2 minutes.
  5. Repeat with the remaining batter, adding more grease to the skillet as needed.
  6. Serve warm with powdered sugar, lingonberry sauce, or your favorite toppings.

Notes

For fluffier pancakes, incorporate beaten egg whites into the batter. Can store leftovers in an airtight container in the fridge for up to 3 days.
