A quick and nourishing meal blending ground turkey, earthy mushrooms, and tender spinach, perfect for cozy evenings.

Ingredients

  • 1 tbsp Olive Oil
  • 1 lb Ground Turkey (93/7 lean recommended)
  • 1 small Yellow Onion (finely diced)
  • 8 oz Cremini Mushrooms (sliced)
  • 3 cloves Garlic (minced)
  • 5 oz Fresh Baby Spinach
  • 1 tsp Italian Seasoning
  • 1/4 tsp Red Pepper Flakes (optional)
  • 1/2 tsp Salt (or to taste)
  • 1/4 tsp Black Pepper (or to taste)

Instructions

  1. Heat the Olive Oil
  2. Add the ground turkey to the skillet and cook it while breaking it up until browned.
  3. Drain any excess fat from the cooked turkey and set it aside for later.
  4. In the same skillet, add the diced onion and sauté until softened, about 3-4 minutes.
  5. Add sliced mushrooms to the skillet and cook until they are browned.
  6. Stir in the minced garlic and optional red pepper flakes; cook for 1 minute until fragrant.
  7. Return the browned turkey to the skillet. Add fresh spinach in handfuls, stirring until it wilts.
  8. Season the mixture with Italian seasoning, salt, and pepper. Stir everything together until well combined.
  9. Let the skillet simmer for 2-3 minutes to allow all the flavors to meld together.
  10. Serve the skillet hot, and enjoy the hearty and nourishing meal!

Notes

Pairs well with quinoa, brown rice, or a green salad. Store leftovers in an airtight container for up to 3 days or freeze for up to 2 months.
