Delicious turkey stuffed peppers filled with rice, spices, and topped with melted cheese.

Ingredients

  • 4 bell peppers
  • 1 lb ground turkey
  • 1 cup cooked rice
  • 1 can diced tomatoes
  • 1 cup shredded cheese
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and let the magic begin!
  2. Cut the tops off the bell peppers and remove the seeds, setting the stage for stuffing.
  3. Heat olive oil over medium heat in a skillet. Sauté onion and garlic until softened.
  4. Add the ground turkey to the skillet and cook until browned.
  5. Stir in the cooked rice, diced tomatoes, Italian seasoning, salt, and pepper.
  6. Carefully stuff the mixture into the bell peppers and place them in a baking dish.
  7. Top the stuffed peppers with shredded cheese.
  8. Cover the dish with foil and bake for 30 minutes.
  9. Remove the foil and bake for an additional 10 minutes until the peppers are tender and the cheese is bubbly and golden.

Notes

Store cooled leftovers in an airtight container for up to 3 days. Can also be frozen for 3 months.
