A comforting dish of bell peppers stuffed with flavorful ground turkey, rice, and spices, perfect for family gatherings.

Ingredients

  • 4 large bell peppers
  • 1 pound ground turkey
  • 1 cup cooked rice
  • 1 cup diced tomatoes
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. Heat a drizzle of oil in a skillet and sauté the diced onion and minced garlic until softened.
  4. Add the ground turkey to the skillet and cook until browned.
  5. Stir in the cooked rice, diced tomatoes, Italian seasoning, salt, and pepper.
  6. Gently stuff each bell pepper with the turkey mixture.
  7. Place the stuffed peppers upright in a baking dish and cover with foil.
  8. Bake in the preheated oven for 25-30 minutes until tender.
  9. If adding cheese, uncover the peppers, sprinkle cheese on top, and bake for an additional 5-10 minutes.
  10. Serve warm.

Notes

Leftovers can be stored in an airtight container in the refrigerator for about 3-4 days. They can also be frozen for up to 3 months.
