A vibrant and easy dish featuring buttery salmon, cherry tomatoes, and fresh spinach, perfect for any occasion.

Ingredients

  • 4 salmon fillets
  • 1/4 cup unsalted butter
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach
  • 1/2 teaspoon red pepper flakes
  • Salt and pepper to taste
  • 1 tablespoon fresh parsley, chopped
  • Juice of 1 lemon

Instructions

  1. Melt the butter in a large skillet over medium heat. Add garlic and cook until fragrant, about 1 minute.
  2. Add the cherry tomatoes and sprinkle in the red pepper flakes, cooking until the tomatoes soften and their juices start to release.
  3. Push the tomatoes to one side of the skillet and place the salmon fillets on the other side. Season the salmon with salt and pepper.
  4. Cook the salmon for about 5-7 minutes on each side or until the salmon is fully cooked through and has a lovely golden crust.
  5. Add the spinach to the skillet and gently stir everything together, cooking until the spinach wilts beautifully.
  6. Squeeze fresh lemon juice over the salmon and garnish it with chopped parsley before serving.

Notes

For best results, use wild-caught salmon for richer flavor. You can prep the garlic and tomatoes beforehand to speed up cooking.
