A delightful Tuscan-inspired dish featuring succulent salmon in a creamy sauce with vibrant cherry tomatoes and spinach.

Ingredients

  • 4 salmon fillets
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach
  • 1/2 cup heavy cream
  • 1/2 teaspoon red pepper flakes
  • Salt and pepper to taste
  • Fresh parsley, for garnish

Instructions

  1. Heat olive oil in a skillet over medium heat, allowing it to shimmer.
  2. Season the salmon fillets with salt and pepper, then place them in the skillet.
  3. Cook for 4-5 minutes on each side until golden and cooked through.
  4. Remove the salmon from the skillet and set aside.
  5. Add minced garlic to the skillet and cook until fragrant.
  6. Toss in cherry tomatoes and spinach, cooking until spinach wilts.
  7. Pour in heavy cream and add red pepper flakes, stirring to combine.
  8. Return the salmon to the skillet and spoon sauce over the top.
  9. Garnish with fresh parsley before serving.

Notes

Serve with garlic bread or over mashed potatoes for a complete meal. Store leftovers in an airtight container for up to 2 days.
