A comforting Tuscan Chicken Pasta featuring creamy sauce, fresh spinach, and vibrant cherry tomatoes, perfect for any occasion.

Ingredients

  • 2 boneless, skinless chicken breasts
  • 8 oz pasta (penne or fettuccine)
  • 2 cups spinach
  • 1 cup cherry tomatoes, halved
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Basil for garnish (optional)

Instructions

  1. Cook the pasta according to package instructions. Drain and set aside while you prepare the delectable sauce.
  2. Heat olive oil in a large skillet over medium heat. Season chicken breasts with salt and pepper, then cook until golden brown, about 5-7 minutes on each side. Once done, remove chicken from the skillet and let it rest.
  3. Add minced garlic to the same skillet and sauté until fragrant. Toss in the halved cherry tomatoes and spinach, cooking until the spinach wilts down and softens.
  4. Stir in the heavy cream and grated Parmesan cheese, mixing well until the sauce is creamy and luscious. Taste and adjust seasoning.
  5. Slice the rested chicken and return it to the skillet. Add in your cooked pasta, tossing to combine every element beautifully.
  6. Serve hot, garnished with fresh basil if desired.

Notes

Pairs wonderfully with a garden salad or garlic bread. Storage: Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
