A heartwarming Tuscan Soup featuring Italian sausage, creamy goodness, and vibrant greens, perfect for cozy evenings.

Ingredients

  • 1 pound Italian sausage
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 3 medium potatoes, thinly sliced
  • 1 bunch kale, chopped
  • 1 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. Sauté the Italian sausage in a large pot over medium heat until browned.
  2. Add the chopped onion and garlic, cooking until fragrant and soft.
  3. Pour in the chicken broth and add the sliced potatoes. Bring to a boil, then reduce heat and simmer until potatoes are tender.
  4. Incorporate the chopped kale and cook until wilted.
  5. Final add the heavy cream and season with salt and pepper to taste. Heat through gently and serve warm.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat on the stovetop or microwave.
