Delightful bites featuring a whimsical blend of sweet blueberries and creamy brie wrapped in spicy jalapeños.

Ingredients

  • 12 medium jalapeño peppers (halved lengthwise and seeded)
  • 1 tbsp olive oil (15ml)
  • 1/4 tsp kosher salt (1g)
  • 8 oz brie cheese (225g, rind removed and diced small)
  • 1 cup fresh blueberries (150g, divided into 3/4 cup and 1/4 cup)
  • 1/4 cup granulated sugar (50g)
  • 1 tbsp fresh lemon juice (15ml)
  • 1 tsp fresh thyme leaves (1g, scattered for garnish)
  • 1/2 tsp black pepper flakes (1g, for garnish)

Instructions

  1. Prepare the Jalapeños: Preheat your oven to 375°F (190°C) and slice the jalapeños in half lengthwise, removing seeds as desired.
  2. Drizzle with Olive Oil: Arrange jalapeños on a baking sheet, drizzle with olive oil, and sprinkle with kosher salt.
  3. Create the Blueberry Mixture: In a bowl, combine diced brie, 3/4 cup blueberries, sugar, and lemon juice.
  4. Stuff the Jalapeños: Fill each jalapeño half with the blueberry-brie mixture, packing them generously.
  5. Bake to Perfection: Place in the oven and bake for 20-25 minutes until cheese is bubbly and jalapeños are tender.
  6. Garnish and Serve: Cool slightly, and top with thyme leaves and black pepper flakes before enjoying.

Notes

Serve with Sauvignon Blanc or iced tea, and enjoy within 3 days if leftovers are stored properly. Feel free to substitute brie with goat cheese or cream cheese.
