A comforting one-pot meal with tender chicken and buttery potatoes in a creamy garlic-Parmesan sauce.

  • 2 lbs Boneless, Skinless Chicken Breasts, cut into 1.5-inch chunks
  • 1.5 lbs Baby Yellow Potatoes, halved
  • 1 cup Low-Sodium Chicken Broth
  • 1/2 cup Heavy Cream
  • 4 oz Cream Cheese, softened and cubed
  • 3/4 cup Freshly Grated Parmesan Cheese, plus more for garnish
  • 6 cloves Garlic, minced
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 1 tsp Onion Powder
  • 2 tbsp Olive Oil
  • 2 tbsp Fresh Parsley, finely chopped

Instructions

  1. Heat the olive oil in a skillet over medium-high heat.
  2. Season the chicken chunks with salt, black pepper, and onion powder.
  3. Sear the chicken on all sides until golden brown—about 3-4 minutes per side.
  4. Place the chicken into the slow cooker.
  5. Layer the halved baby potatoes over the chicken.
  6. Sprinkle the minced garlic across everything.
  7. Whisk together the chicken broth, heavy cream, and cream cheese until smooth.
  8. Pour the mixture over the chicken and potatoes in the slow cooker.
  9. Set your slow cooker to low and cook for 6 hours.
  10. Shred the chicken with a fork in the slow cooker.
  11. Stir in the freshly grated Parmesan cheese until melted.
  12. Spoon the creamy chicken and potatoes into bowls and garnish with parsley and extra Parmesan.

Notes

For added flavor, marinate chicken beforehand. Feel free to swap potatoes for sweet potatoes or cauliflower.
