Delicious and easy-to-make Vegan Tofu Tacos, perfect for gatherings or simple weeknight dinners.

Ingredients

Scale
  • 1 block firm tofu, pressed and crumbled
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Corn tortillas
  • Chopped onions
  • Chopped cilantro
  • Lime wedges
  • Salsa or avocado for topping (optional)

Instructions

  1. Sauté the tofu: In a skillet, heat the olive oil over medium heat. Add the crumbled tofu and cook for about 5 minutes until it begins to brown.
  2. Add flavor: Stir in the cumin, chili powder, salt, and pepper. Cook for another 3-5 minutes, allowing the spices to infuse the tofu.
  3. Warm your tortillas: While the tofu is cooking, warm the corn tortillas in a separate pan or microwave until they’re pliable and ready to hold all the delicious fillings.
  4. Assemble the tacos: Fill each tortilla with the cooked tofu mixture, letting the flavors meld together.
  5. Top with fresh ingredients: Top your tacos with chopped onions, fresh cilantro, and any additional toppings like salsa or avocado that you desire.
  6. Serve with a lime twist: Serve with lime wedges on the side; a squeeze of lime can brighten your taco experience!

Notes

Leftover tofu filling can be stored in the refrigerator for up to 3 days in an airtight container. Reheat gently on the stovetop. Warm corn tortillas fresh each time to maintain texture.
