A colorful and nutritious bowl featuring roasted sweet potatoes, spiced chicken, and creamy tahini sauce.

  • 2 medium Sweet Potatoes (about 1.5 lbs (680g), peeled and cut into 3/4-inch (2cm) cubes)
  • 2 tbsp Olive Oil
  • 1/2 tsp Smoked Paprika
  • Salt and Black Pepper (to taste)
  • 1 lb Boneless, Skinless Chicken Breast (cut into 1-inch (2.5cm) chunks)
  • 1 tsp Paprika
  • 1/2 tsp Cumin
  • 1/2 tsp Garlic Powder
  • 1/4 tsp Onion Powder
  • Pinch Cayenne Pepper (optional)
  • 1/2 cup Tahini
  • 1/4 cup Lemon Juice (freshly squeezed)
  • 1 clove Garlic (finely minced)
  • 46 tbsp Cold Water
  • 1.5 cups Uncooked White Rice (cooked according to package directions)
  • 1 tbsp Toasted White Sesame Seeds
  • 2 tbsp Fresh Green Parsley (finely chopped)

Instructions

  1. Preheat your oven to 400°F (200°C). Toss the sweet potato cubes with olive oil, smoked paprika, salt, and black pepper, and roast for about 25-30 minutes.
  2. Cook the white rice according to package directions.
  3. Heat olive oil in a large skillet, season chicken pieces, and sauté for 6-8 minutes until cooked through and golden brown.
  4. Combine tahini, lemon juice, minced garlic, and a pinch of salt in a bowl, whisk in cold water until creamy.
  5. Assemble the bowl with rice, roasted sweet potatoes, spiced chicken, and drizzle tahini sauce on top, garnished with sesame seeds and parsley.

Notes

For extra flavor, let the sweet potatoes caramelize slightly while roasting. The tahini sauce can be adjusted for thickness by altering the water content.
