Bright and refreshing Vietnamese spring rolls filled with fresh herbs and crunchy vegetables, perfect for a fun culinary experience with friends.

Ingredients

  • Rice paper wrappers
  • Shrimp (cooked and peeled)
  • Rice noodles (cooked)
  • Lettuce leaves
  • Mint leaves
  • Cilantro
  • Carrots (julienned)
  • Cucumber (julienned)
  • Peanut sauce or hoisin sauce (for dipping)

Instructions

  1. Gather and prepare your ingredients, laying them out in an assembly line.
  2. Dip a rice paper wrapper in warm water for about 10-15 seconds until soft and pliable.
  3. Place the softened wrapper on a flat surface for rolling.
  4. Layer the fillings of lettuce, shrimp, rice noodles, mint, cilantro, carrots, and cucumber in the center of the wrapper.
  5. Fold the sides of the wrapper over the filling and roll tightly from the bottom to the top.
  6. Repeat the process with remaining wrappers and ingredients.
  7. Serve with peanut or hoisin sauce for dipping.

Notes

Pair with a light Asian salad or spicy noodle soup for a complete dinner. Store leftovers wrapped in a damp towel in an airtight container for up to 2 days.
