A warm, comforting white bean soup made with garlic, herbs, and optional greens. Perfect for chilly evenings.

  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable or chicken broth
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 cup spinach or kale (optional)
  • Parmesan cheese (optional, for serving)

Instructions

  1. Sauté the aromatics: In a large pot, heat a bit of olive oil over medium heat. Add the chopped onion and cook until translucent, about 5 minutes.
  2. Add the garlic: Add the minced garlic and cook for another 1-2 minutes until fragrant.
  3. Combine ingredients: Stir in the white beans, broth, and dried thyme. Bring to a boil, then reduce heat and let simmer for about 20 minutes.
  4. Blend for creaminess: For a creamy texture, use an immersion blender to blend part of the soup, or transfer a portion to a blender and puree before returning to the pot.
  5. Season to taste: Season with salt and pepper to taste.
  6. Add greens (if desired): If using, stir in the spinach or kale and cook until wilted.
  7. Serve and enjoy: Serve hot, topped with Parmesan cheese if desired.

Notes

For a more robust flavor, allow the soup to simmer a little longer. You can customize the soup with various vegetables and spices.
