White Chicken Enchiladas

Comforting white chicken enchiladas filled with tender chicken, creamy sauce, and topped with delicious melted cheese.

  • 2 cups shredded cooked chicken
  • 1 cup sour cream
  • 1 can (10 oz) green enchilada sauce
  • 1 cup shredded Monterey Jack cheese
  • 8 flour tortillas
  • 1 tablespoon olive oil
  • 1/2 cup diced onion
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C) so it’s perfectly hot for your enchiladas!
  2. Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the diced onions and sauté until they become translucent.
  3. Stir in the shredded cooked chicken, garlic powder, cumin, and season with salt and pepper. Mix well.
  4. Combine 1/2 cup of the green enchilada sauce with the sour cream in a separate bowl.
  5. Spread a light layer of the sauce mixture on the bottom of your baking dish.
  6. Fill each tortilla with the chicken mixture and roll it up, placing seam side down in the baking dish.
  7. Pour the remaining green enchilada sauce over the filled tortillas.
  8. Top with the shredded Monterey Jack cheese.
  9. Bake for 20-25 minutes, or until the cheese is bubbly and golden.
  10. Serve warm and enjoy!

Notes

For a spicier kick, consider adding jalapeños or using a spicier green enchilada sauce.
