Delicious and crispy zucchini corn fritters, perfect for breakfast or as an appetizer, celebrating seasonal produce.

Ingredients

  • 2 medium zucchini, grated
  • 1 cup corn kernels (fresh or frozen)
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1/4 cup grated Parmesan cheese
  • 2 green onions, chopped
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Oil for frying

Instructions

  1. Combine the grated zucchini, corn, flour, eggs, Parmesan cheese, chopped green onions, garlic powder, salt, and pepper in a large bowl. Mix until well combined.
  2. Heat oil in a skillet over medium heat, about 1/4 inch deep.
  3. Drop spoonfuls of the mixture into the hot oil, flattening them slightly with the back of the spoon.
  4. Cook for 3-4 minutes on each side or until golden brown.
  5. Remove the fritters from the skillet and drain on paper towels.
  6. Serve warm with your choice of dipping sauce.

Notes

If the zucchini is too watery, squeeze out excess moisture before mixing. These fritters can also be baked instead of fried.
