Crispy and flavorful zucchini herb crackers, perfect for snacking or pairing with dips.

Ingredients

  • 1 medium zucchini, grated
  • 1 cup almond flour
  • 1/4 cup nutritional yeast
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried herbs (thyme, oregano, or basil)
  • Salt and pepper to taste
  • 1 egg (or flax egg for vegan option)
  • Olive oil for brushing

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Combine the grated zucchini, almond flour, nutritional yeast, garlic powder, onion powder, and dried herbs in a large bowl.
  3. Add salt, pepper, and the egg. Mix everything until you have a dough-like consistency.
  4. Scoop portions of the mixture onto the prepared baking sheet and flatten each scoop into cracker shapes.
  5. Brush the tops of the crackers with olive oil.
  6. Bake for 15-20 minutes or until the edges are golden and crispy.
  7. Allow the crackers to cool on the baking sheet for a few minutes before transferring them to a wire rack.

Notes

Grate the zucchini well and squeeze out excess moisture to avoid soggy crackers.
