A comforting and healthy twist on traditional lasagna made with layers of zucchini, marinara sauce, ricotta, and mozzarella.

Ingredients

  • 3 large zucchinis, sliced
  • 1 lb ground beef or turkey
  • 2 cups marinara sauce
  • 1 cup ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 egg
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • Fresh basil for garnish (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Brown the ground beef or turkey over medium heat until browned. Drain excess fat and stir in marinara sauce. Let simmer.
  3. Mix the ricotta cheese, egg, garlic powder, onion powder, salt, and pepper until smooth and creamy.
  4. Layer zucchini slices, meat sauce, ricotta mixture, and mozzarella in a baking dish. Repeat layers, finishing with mozzarella and Parmesan.
  5. Bake for 25-30 minutes, or until cheese is bubbly and golden.
  6. Cool slightly, garnish with basil, and serve.

Notes

Lightly salting the zucchini before layering can help prevent a soggy lasagna. Feel free to add more vegetables for extra nutrition.
