A light and vibrant twist on pasta featuring fresh zucchini noodles, garlic, cherry tomatoes, and Parmesan.

Ingredients

  • 2 medium zucchinis
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup grated Parmesan cheese
  • Fresh basil for garnish

Instructions

  1. Spiralize the Zucchini: Use a spiralizer to create zucchini noodles. If you don’t have a spiralizer, you can use a vegetable peeler to create ribbons.
  2. Heat the Olive Oil: Heat olive oil in a large pan over medium heat.
  3. Sauté the Garlic: Add minced garlic and sauté for about 1 minute until fragrant.
  4. Cook the Zucchini Noodles: Add the zucchini noodles to the pan and cook for 2-3 minutes.
  5. Season with Salt and Pepper: Season with salt and pepper.
  6. Add Cherry Tomatoes: Add halved cherry tomatoes and cook for another 1-2 minutes.
  7. Serve with Love: Serve warm topped with grated Parmesan cheese and fresh basil.
