A fun and healthy twist on classic pizza, these Zucchini Pizza Boats are filled with marinara sauce, cheese, and pepperoni, making them a delicious and low-carb option for pizza lovers.

Ingredients

  • 2 medium zucchinis
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup pepperoni slices
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Halve the zucchinis lengthwise and scoop out the center to create boats.
  3. Sprinkle with salt and pepper.
  4. Spread marinara sauce inside each zucchini boat.
  5. Top with mozzarella cheese and pepperoni slices, then sprinkle with Parmesan cheese.
  6. Sprinkle Italian seasoning over the top.
  7. Bake in the oven for 25-30 minutes until zucchinis are tender and cheese is bubbling.
  8. Serve warm.
